
Smokin' Ray's Original All Purpose Mac & Cheese
Creamy, rich, cheesy — the first empty pan at the cookout.
Creamy, rich, cheesy mac and cheese seasoned with Smokin' Ray's Original All Purpose Seasoning. Designed to prove that Original All Purpose isn't just for meat, this recipe delivers incredible flavor without overpowering the dish.
It became the first empty pan at a Fourth of July cookout where every other dish still had leftovers.
Ingredients
- • 1 lb elbow macaroni
- • 1 stick butter
- • 2 tablespoons all-purpose flour
- • 3 tablespoons Smokin' Ray's Original All Purpose Seasoning
- • 8 oz cream cheese
- • 16 oz Velveeta cheese, cubed
- • 6 oz provolone cheese, shredded or sliced
- • 1½ cups whole milk
- • ½ teaspoon cayenne pepper
- • Shredded cheddar cheese for topping
- • Light sprinkle grated Parmesan cheese (optional)
- • Light sprinkle Smokin' Ray's Original All Purpose for topping
Directions
- Cook macaroni until just al dente. Drain and set aside.
- Melt the butter over medium heat.
- Whisk in the flour and Smokin' Ray's Original All Purpose Seasoning until smooth and creamy.
- Add the cream cheese and stir until completely melted.
- Add the Velveeta and continue stirring until smooth.
- Stir in the provolone until melted.
- Slowly whisk in the milk until the sauce is creamy and smooth.
- Stir in the cayenne pepper.
- Fold in the cooked macaroni until evenly coated.
- Pour into a greased 9x13 baking dish or aluminum pan.
- Top with a light layer of shredded cheddar, a light sprinkle of Parmesan (optional), and a light dusting of Smokin' Ray's Original All Purpose.
- Bake at 350°F for 20-30 minutes until hot, bubbly, and lightly browned around the edges.
Ray's NotesWhen I created Smokin' Ray's Original All Purpose, my goal wasn't to make another barbecue rub. I wanted a seasoning that could truly be used on just about everything.
This mac and cheese was the ultimate test.
We took it to a Fourth of July cookout where there were plenty of side dishes and plenty of leftovers... except this one. The pan came home empty.
The Original All Purpose blends into the cheese sauce, adding layers of savory flavor without overpowering the dish. It's comfort food with just enough personality to make people ask, "What did you put in this?"
